Kale had been around for a long time but it rose to the top of veggie popularity in 2012. It was put in the category of “superfoods” and didn’t just catch on in our everyday salads but graced sweatshirts, coffee mugs and the most trendsetting menus. The health industry boomed with the news of kale and its nutritional value. Five years later it is still a top superfood and found on most mainstream menus across the U.S. But is kale simply trendy or is it really good for you?
Doctors and nutritionist recommend eating dark leafy greens everyday as part of a regular, healthy diet. Kale is a leader in this category with beta-carotene, calcium and iron. It is high in fiber and rich in Vitamin K. Kale is low fat, fills you up and many people (like myself) think it tasted great. Kale is truly a superfood.
In a list, here is why kale is a superfood. Kale is. . .
- high in fiber to make you feel fuller and also to aid in digestion.
- low calorie and low in fat (36 grams and 0 grams respectively in 1 a 1 cup serving)
- rich in beta-carotene (that converts to Vitamin K) that heals our bodies with antioxidants and boosts our immune system.
- full of calcium which we know is essential for strong bones and teeth, but also reduces the risk of colon cancer and relieves PMS.
- high in iron which is an essential nutrient required to oxygenate our blood. This promotes brain function and enriches hair, nails and skin. (It has more iron then beef!)
- a good source of Vitamin K which we use to build and repair bones as well as form blood clotting for cuts and wounds.
Do you get the picture? Kale is an incredible superfood and should absolutely be celebrated in pop culture!

I must admit I am not a huge fan of kale because most of the time its shaved into many smoothies but now knowing how great it is I think I need to look at other recipes to make it more appetizing.
Great post. I’m not a huge fan of kale, but its okay in smoothies.

I know kale is supposed to be good for me, but I just don’t care for it. I should try to find a recipe so I end up with something very un-kale like.
I love kale! My cousin has it in her garden and gives us so much that I end up juicing most of it so it doesn’t go bad!
I’ll be honest, I’m not really a fan of kale. I can have it on a sandwich, but in the form of a chip or a salad, blech. No thank you. I’ll stick to regular lettuce.
I have acquired the taste for Kale over time. I love baking them into crisps. It is definitely a super food.
I’ve been trying to get into kale since it became popular because I’m just not a fan of its texture or flavor! But nice to know it’s not just a trendy thing, but does have real health benefits.
Trendy or not, I love eating Kale. I still remember the first time I tasted it – it was at my sister-in-law’s house many, many moons ago! 🙂
It’s a super food for all of the reasons you listed plus you can prepare it in various ways. I love kale steamed but I also like it in salad. It’s versatile and best of all, CHEAP!
We love Kale .. or at least I do. My kids are getting used to eating it more. Kale chips are a favourite in our house 😀
I didn’t know about this! I should start eating Kale. Thank you for this post.
I do not enjoy Kale. AT ALL. Sure it’s healthy, but it’s on par with spinach and I LOVE THAT VEGGIE sooooooo….. I load up on that one instead, NO SHAME!
That’s a really good take on kale. I like it for the simple fact that it’s so versatile, yet packed with nutrients and fibre. Kale all the way! Cheers!!
I don’t think I have ever taste kale 😀 haha I have no idea what to expect – but I kinda think of it as a bitter and not funny veggie lol – maybe I should give it a try
Kale is a super food, no doubts about it. I love having this with in my salad. At times when I am hungry, Ijust whip a bowl of kale with curd and onions and have it !!! TOtally healthy!!!
I do like kale! Can’t say I love it but, I like it. I do cook with it and haven’t quite perfected kale chips yet but am always looking for other meals to make with kale.

I absolutely love kale! The texture, the look and the taste! Cooked or not! I discovered it quite recently and really, I am a fan! But I think it is also becoming a trend ahah
I think it is a trend, personally. No one likes the taste of kale. It does help smoothies, but it’s not good tasting.
I personally love kale and use it in dishes often. My favorite way to enjoy it is with a little olive oil, lemon and salt massaged into the leaves and topped with grilled fish.
I’m not a big fan of kale at all. I know it’s healthy but it’s a meh for me but on the other hand my hubby does like it.
I don’t like kale in my smoothes but love to eat them with some chicken . But I know it’s all trend now lol
I think Kale is superfood. I have tried putting it in my beef soup but it is hard to take. It is on a bittery side.
I just had some kale for dinner tonight. It was part of a stir fry. I have been a fan of kale for a long time. I think it’s a superfood.
I used to be hooked on kale. I loved it so much so I’ll definitely recommend kale as well.
