So, I invited people over last minute. I needed an appetizer substantial enough to satisfy some hunger and something with more pizazz than a bag of baby carrots and some ranch. Luckily my boys live almost entirely on breakfast foods so I had a roll of crescent roll dough and pre-cooked bacon. I also had some left over goat cheese and a bit of chopped dates from making my own granola cereal. I whipped up some apps that were a real hit and impressed my guests! I was so excited that I had to share it with you. So, here is my #momhack recipe for “Fancy Goat Cheese & Prosciutto Pinwheels” made from crescent rolls and bacon!
Pop open a package of crescent rolls and lay them out on a cookie sheet.
Spread completely with about 2 ounces of creamy, room temperature goat cheese.
Sprinkle with chopped dates.
Lay strips of bacon on the entire area of the dough.
Roll carefully and tightly.
Cut into even pieces about an inch and a half wide.
Grease baking sheet and set out pinwheels a couple inches apart.
Bake at 350 degrees for approximately 12 – 15 minutes until the tops begin to turn a golden brown.
Serve warm. . . but they are still good if they sit out a bit.
TIP: If you love rosemary, sprinkle some on the baking sheet before putting them in the oven.
