My family has been braving the Chicago sub temperatures by staying inside, so to hold back the cabin fever and cheer them up, I have been making warm comfort food. My oldest son walked in and excitedly remarked “Dude! I am so happy that our house smells like beef and not fish again!” (Ha Ha!) You all know that my famous theme to cook by is “Fast and Easy” right? Well, this recipe is just that! This is fast because it takes under 10 minutes of prep time and then it just sits in the crock pot to cook to perfection. With some craft beer and Worcestershire sauce this recipe cant get any easier. For fall apart, melt-in-your-mouth roast beef, follow the steps below.
Ingredients:
Beef Roast – (enough to equal 1/2 to 1 pound of meat per person)
1/2 tsp garlic salt
1 tsp seasoned salt ( I use a mix of seasonings and sea salt)
1/2 cup Worcestershire sauce
1 craft beer
1/2 cup water
To Start, plug in and turn on your slow cooker. Be smart (not like me) and have some slow cooker bags to line the inside so you don’t have a huge mess to clean up at the end. To keep it Fast and Easy.
On a skillet or pan, brown the sides of your roast to seal in the juices!
Transfer the roast into the slow cooker. (And don’t forget to wash your skillet or the next morning the kids get all whiny about the pancakes tasting weird.)
Drizzle some olive oil over the roast.
On top of the roast sprinkle seasoned salt and garlic salt.
Around the roast pour your Worcestershire sauce, beer and water.
Those of you who know your beer don’t freak out that I am using Blue Moon. They are owned, of course, by Miller brewing co. so it is argued that this is not a craft beer but a marketing ploy to use a label that makes people believe it is a craft beer. Either way, it is delicious and what I had available.

Cook on low 6 – 8 hours for best results or on high 4 – 6 hours when you realize you are late again and people are going to be hungry.
It will be ready when the internal temp is about 155 degrees. (I use a meat thermometer) but if you tear at it with a fork and it falls beautifully apart, you know you have done well. (If it does not turn out good totally blame the stupid slow cooker.)

I always forget to buy them and end up wishing I would remember to put it on my grocery list while I am scrubbing that darn crock pot forever LOL I really do thing that searing the meat first and drizzling with the olive oil makes it softer!

I usually ball up tin foil and put it in the bottom of the slow cooker to keep it from getting dried out. I think I’m going to try your recipe with that little tweak. Thanks 🙂
