My son wants to take a sweet dessert in his lunch tomorrow that will pair with Thanksgiving leftovers. He chose Cinnamon Apple Caramel Muffins! Since we were making them, I decided to share the recipe with you so that you can enjoy some too. Make them easy and fast just by following this simple recipe!

Heat oven to 350 degrees.
Carefully chop 10 -12 pieces of caramel candy into small squares and set them aside.

Peel and dice apples until you yield  a little over 1/2 cup.
(We used a large granny smith.)
Set this aside.

Buy a bag of finely chopped walnuts or chop your own and set these aside as well.

In a medium sized mixing bowl stir dry ingredients until blended:
2 cups whole wheat flour
3/4 cup of white sugar
2-3 tsp. cinnamon
2 tsp. baking powder
Set this aside.

In a small bowl combine and mix well:
1 large egg
1 cup of 2% milk
1/2 tsp vanilla extract

Now add a 1/4 cup of melted butter to the wet bowl stirring gently…
Add wet ingredients to dry ingredients and stir to mix.
Fold in caramel pieces and apple dices.

Fill muffin tin with paper or foil liners and fill each one more than half full.

Sprinkle the tops with chopped walnuts.

Bake approx 20 minutes.

Bake for 20 minutes and check by inserting a toothpick. If the muffins are brown on top and spring back, they should be done. 

Let cool a little until warm and then sprinkle with powdered sugar and serve.
