Does your family love pasta dishes but wanting something new? How about trying my families favorite spaghetti frittata recipe! Have you ever made frittata before? It can be a little tricky to cook properly because you have to do a trick when flipping it in the pan, but you will impress both your family and yourself once you perfect this move! Here is how to make this unique and versatile dish.

You will need:

  • 2 c. cooked pasta (whole grain or gluten free is great too)
  • 1/2 cup flax seed meal
  • 4 tsp. extra virgin olive oil
  • 1 chopped onion
  • 2 large egg whites
  • 1/2 cup skim milk
  • 1/2 cup chopped green onion (keep 1/4 cup out for garnish)
  • 2 T chopped, fresh basil
  • 1 tsp. salt
  • 1/2 tsp ground pepper
  • 1/4 cup red pepper flakes
  • 1/2 cup giardiniera mix

How to cook: 

Heat the oil on medium.

Add onions. Stir and cook ’till golden. 10 – 12 minutes.

Transfer onions to a bowl and set aside.

Whisk egg whites and milk in a large bowl.

Stir in onions, parsley, Parmesan, basil, salt, pepper and giardiniera,

mix well.

Add spaghetti and mix again.

Pour contents into a greased pan on medium heat.

Cook for approx. 6 – 8 minutes until the bottom is golden.

(This is the tricky part). . .

Flip the pasta mix over onto a platter or tray.

TIP: Make sure that there is no oil dripping on the sides of the pan!

Slide the spaghetti frittata back into the pan and cook until golden.

Top with a dollop of sour cream, spoonful of giardiniera

and green onions.

(I mix the giardiniera and sour cream together)

Serve with slice of meatloaf and a fresh salad.
