This is my favorite recipe for Homemade Pico de Gallo. I keep fresh veggies in the fridge so that I can whip up easy and healthy recipes that taste fresh! Remember to add staple veggies to your grocery list such as tomatoes, cucumber, green onion, yellow or red onions and spinach, for example. Having lemons and limes are always important to add freshness to any recipe. Enjoy this fast and fresh meal with a cheese conversion for a warm and heavier version. 

What you need:



Dice the following in a bowl:

1/2 large onion
1/2 cucumber 
1/2 green bell pepper

Then add: 

1 whole seeded jalapeno finely chopped (If you want spicy)

2 cloves of finely chopped garlic

1/4 cup chopped cilantro

Salt and Ground pepper to taste

and then . . . 

Juice from 1 lemon and 1 lime

Then from your peels, grate approx. 1 tsp lemon or lime zest

In the same bowl add 3 whole diced tomatoes 
and carefully stir all ingredients together.  
You are Finished! 
 
Enjoy with tortilla chips or a fork! 
 
I love this on salads, in wraps and mixed with cold beans!
But Wait! There’s More . . .
You can also mix it with your favorite cheese for a wonderful warm dip! This is less healthy of course but if you want a heavier meal, this is a delicious one.
I like to keep it in the fridge and heat it up over spinach 
for a fast and healthy meal.
