Make Ahead Breakfast Burritos – Healthy & Easy for Busy Mornings

I am thrilled to be a guest blogger on Jenny at Dapperhouse and chose to share a great recipe for make ahead breakfast burritos to make those early morning transitions easier and nutritious.  Too often we send the kids off with a breakfast bar or frozen waffle.  Most likely they are going to crash in a few hours, I like to make these breakfast burritos in advance and store them in the freezer for a quick and healthy breakfast.  You can adapt them to your family’s tastes as well.    These are also great to make ahead recipe before you go on a vacation where you will have a kitchen.

First the filling:  You can add anything your family would enjoy in their burritos.  I followed the recipe the first time I made these but then experimented with different veggies, bacon and cheese combos.  This recipe is more about technique than a one for all recipe.  Customize for what your family will eat.
Next it is roll up time.  Sorry I don’t have any photos of rolling them but just be sure and cover all the ingredients with your tortillas.  I use whole wheat tortillas for some added nutrition.
I like to place the recently prepared burritos on a cookie sheet and cover with plastic wrap until they are completely frozen.

Ingredients

12 eggs
2 Tbsp. butter
1 lb. pork sausage, cooked and drained
1/2 cup chunky salsa optional
2 cups Cheddar cheese
24 flour tortillas- I use whole wheat

Preparation:

In large skillet, melt butter. Beat eggs in large bowl and add to skillet. Cook eggs in butter, stirring frequently, until scrambled and set. Add cooked sausage and salsa to egg mixture and mix gently.
Warm tortillas as directed on package. Place about 1/2 cup egg and sausage mixture onto each tortilla and sprinkle with some cheese. Roll up each tortilla to make burritos, folding in the ends and rolling up. Place on parchment paper lined cookie sheets and freeze until solid. Then wrap individually and package in zip-lock freezer bags.

When you’re ready to eat, unwrap the burritos, wrap loosely in microwave safe paper towel and heat in the microwave on high power for 1-3 minutes until hot and cheese is melted.

You can also thaw burritos in the refrigerator overnight, then wrap each in foil and bake at 350 degrees for 10-15 minutes until hot.

  1. I always have a problem keeping anything I wrap INSIDE THE TORTILLA. I am not wrapping right I guess. I know u fold end and roll.. mine never come out correctly, love your Blog
